Elderberry Syrup Kit

All the herbs to yield about 2 cups of spiced elderberry syrup. This kit is based on the recipe from my book 100 Days of Herbs.

Ingredients: Elderberries (Sambucus nigra), Seperately packaged: Ginger pieces (Zingiber Officinale), Cassia Cinnamon Chips (Cinnamomum Cassia), Cloves (Syzygium aromaticum)

Instructions:Combine all ingredients in a pot with 3 cups water and bring to a boil. Reduce heat and allow to simmer 45-50 mins. Remove from heat and let cool slightly. Stir in 1-2 cup honey or 2 cups sugar until dissolved.Let cool completely and strain out the solids with cheesecloth or a fine mesh strainer. Discard used herbs and berries.Store in an airtight container in the fridge for 4-6 weeks.
